Barossan cabernet with a firm hand on the tiller. This red wine is a kind of luxury in the world of cabernet's tendency to dourness. Yet whilst there's the generosity of fruit flavour there's not the lack of tannin and requisite acidity; the wine remains - under the hand on the tiller - evenly keeled. Steak Anglais, with English Mustard. Devilled Kidneys? Croque Monsieur. No: a good Steak au Poivre with mash would be best.
