This Chicken & Orzo Skillet Dinner is a rustic one-pan meal that’s both comforting and refreshing. Juicy chicken, tender orzo, and a punchy salsa come together to create a dish that feels effortless yet special. It’s perfect for sharing around the table. Paired with Sister's Run Sunday Slippers McLaren Vale Chardonnay, the wine’s ripe stone fruit and citrus notes lift the flavours, while its creamy body and crisp finish balance the richness of the dish, making each bite and sip feel perfectly in tune.

Chicken & Orzo Skillet Dinner Recipe

Serves 4ppl

Prep = 15mins & 1hr+ marinade

Cook  = 1hr 

Ingredients
4 bone in, skin on chicken thighs
2 red onions – thinly sliced
1 cup orzo
1.5 cups chicken stock
2 tbsp oil

Marinade Mix
1 handful fresh basil
4 cloves garlic
2 tbsp lemon juice
4 tbsp oil
1 tbsp tomato paste
1 tsp harissa
1 tsp salt

Salsa
50g feta
1 small red onion – finely diced
1 lebanese cucumber – diced
1 avo – diced
2 tbsp oil 
Salt

Method

  1. Blend marinade ingredients together and coat the chicken in it. Leave for minimum 1 hour up to 24hrs if possible
  2. Place sliced onions, orzo and chicken in a large ovenproof pan. Pour chicken stock around the pan (not over top of chicken)
  3. Cover with lid and place in the oven @ 200c for 40mins
  4. Remove lid or foil and bake for a further 20mins or until chicken skin is golden
  5. Make the salsa by mixing all the ingredients together
  6. Once finished – serve by drizzling salsa over the top of chicken/orzo mix and finish with a few basil leaves

Tips/Tricks

  • Although it seems like it takes a long time to make – the beauty of this dish is once the chicken is in the oven there is nothing left to do but leave it do it’s thing so a cracking dish to prepare in advance for dinner guests
  • Don’t skip the feta salsa as it really brings the dish together at the end
  • Use boneless chicken thighs for a quicker cook – reduce the cook time in ½ - just brown the thighs in a frying pan before cooking to give you that golden colour
